Yesterday I shared one of my favorite banana bread recipes and told you it is my go-to recipe. While that IS true, I actually have 2 favorite banana bread recipes. This version includes oatmeal, making it as healthy as a recipe like this with flour and sugar can be.
While I am calling this recipe Oatmeal Blueberry Banana Bread, I actually used blackberries when I took these pictures. It’s equally good both ways.
Oatmeal Blueberry Banana Bread
Ingredients:
1 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup oats
2 mashed bananas
1/3 cup buttermilk or yogurt (plain or vanilla)
1/4 cup unsweetened applesauce (or vegetable oil)
1 teaspoon vanilla
2 eggs, beaten
1 cup frozen blueberries (or blackberries)
Directions:
Preheat the oven to 350°F and spray a loaf pan with cooking spray.
Combine the dry ingredients in a large bowl, and the rest of the ingredients (except the berries) in a small bowl. Pour the wet ingredients into the dry ingredients and stir just until all of the dry ingredients are incorporated.
Stir in the frozen berries at this point. If you prefer fresh berries, freeze them for a few minutes before adding them in so they don’t bake away while cooking.
Pour the batter into the loaf pan and bake for 55 minutes, or until a toothpick inserted in the center comes out clean or the top is slightly browned with some cracking of the crust. Cool in the pan for about 15 minutes and then turn out onto a wire rack to cool completely before coving it with saran wrap or tin foil.
Delicious and easy to make – love the use of the applesauce and oatmeal in this quick bread. The blueberries and banana really compliment each other well. I love the low sugar content as it really allows the flavor of the fruit to shine through. What a wonderful treat we’re going to have with our morning and afternoon coffee. Nancy : )
Made as written for the FF&F “Down Home Cooking” tag game using blueberries. Both Siggi & I adore banana bread, but this easy-fix recipe is without doubt our favorite of the genre. Like Nancy, we loved everything about it. I used oil vs the applesauce, but the combo of the oatmeal, blueberries & low sugar is a huge winner for us. I saw Mary Pat’s review and photo and decided I’d make this quick bread too!! I’m so glad I did! I had all the ingredients in the house, I used a 3 berry frozen mix from Costco, blueberries, raspberries and blackberries. I also used frozen bananas. DH and I loved this recipe!! So moist and yummy! I will say my loaf took much longer to cook and I had to tent with foil at the end, but that’s no biggie! These would make great muffins too. Will definitely be making again!!
I haven’t tried it with frozen bananas but I’m sure that would work too. I might cut down a little of the other liquids due to the liquids in the banana…definitely will try it that way as my bananas get saved by going in the freezer!
Yeah, I let the bananas thaw and then drained off all of the liquid. Surprising how much liquid they produced!
The hubby loved his treat I made him…I used old fashion rolled oats and they didn’t incorporate very well in the mixture…I used buttermilk and vegetable oil along with freezing my fresh blueberries…this was very quick and easy to prepare…made for FYC tag game…
