Oatmeal Blueberry Banana Bread
Yesterday I shared one of my favorite banana bread recipes and told you it is my go-to recipe. While that IS true, I actually have 2 favorite banana bread recipes. This version includes oatmeal, making it as healthy as a recipe like this with flour and sugar can be.
While I am calling this recipe Oatmeal Blueberry Banana Bread, I actually used blackberries when I took these pictures. It’s equally good both ways.
Oatmeal Blueberry Banana Bread
Ingredients:
1 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup oats
2 mashed bananas
1/3 cup buttermilk or yogurt (plain or vanilla)
1/4 cup unsweetened applesauce (or vegetable oil)
1 teaspoon vanilla
2 eggs, beaten
1 cup frozen blueberries (or blackberries)
Directions:
Preheat the oven to 350°F and spray a loaf pan with cooking spray.
Combine the dry ingredients in a large bowl, and the rest of the ingredients (except the berries) in a small bowl. Pour the wet ingredients into the dry ingredients and stir just until all of the dry ingredients are incorporated.
Stir in the frozen berries at this point. If you prefer fresh berries, freeze them for a few minutes before adding them in so they don’t bake away while cooking.
Pour the batter into the loaf pan and bake for 55 minutes, or until a toothpick inserted in the center comes out clean or the top is slightly browned with some cracking of the crust. Cool in the pan for about 15 minutes and then turn out onto a wire rack to cool completely before coving it with saran wrap or tin foil.
